Ingredients

6 servings
Brinjal (eggplant, aubergine)8 to 10 small, hollowed
Cooking oil (vegetable oil)⅓ cup, for frying
Minced mutton (goat mince, ground goat)300 g
Onion1, finely chopped
Baharat1½ tsp
Tomato puree¾ cup
Tomato2, grated
Water¾ cup
Pomegranate molasses1 tbsp
Pita bread3 pitas, torn
Curd (plain yogurt, natural yoghurt)2 cups thick yoghurt
Tahini2 tbsp
Garlic3 cloves, crushed
Pine nuts3 tbsp
Ghee1½ tbsp
Saltto taste

Method

5 steps
  1. 1Fry the hollowed aubergines in hot oil until golden and soft. Drain.
  2. 2Fry the onion and mince with baharat and salt until browned, and stuff into the aubergines.
  3. 3Simmer the stuffed aubergines in tomato puree, grated tomato, water and pomegranate molasses until the sauce thickens.
  4. 4Toast the pita until crisp. Whisk yoghurt with tahini, garlic and salt.
  5. 5Layer bread, then aubergines and sauce, then yoghurt. Fry pine nuts in ghee and pour over.
Serve it like this

Serve in a deep dish, yoghurt on top, pine nuts sizzling, with a little tomato sauce peeking at the edges.
