Ingredients

Milk3 cups
Egg4
Sugar⅔ cup
Maida (all-purpose flour, plain flour)1⅔ cups
Prunesabout 20, pitted
Butter2 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Salta pinch

Method

4 steps
  1. 1Soak the prunes in hot water or tea for 20 minutes and drain.
  2. 2Whisk flour, sugar and salt, add eggs and whisk to a paste, then add milk and vanilla gradually.
  3. 3Butter a baking dish generously, scatter the prunes and pour over the batter. Dot with the remaining butter.
  4. 4Bake at 200 C for 15 minutes, then 180 C until puffed, firm and deep golden on top.
Serve it like this

Cut into squares straight from the dish, warm or cold, dusted with sugar. Coffee or cider alongside.
