Lobia, dry (dried black eyed peas)2 cups honey beans or black eyed peas

Red palm oil½ cup
Onion2 large, sliced
Dried red chillidried red peppers, soaked and blended
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1
Ground dried crayfish (ground dried shrimp)1 tbsp
Stock cube (bouillon cube)½ cubeMethod
- 1Boil the beans until very soft, adding water as needed, then mash lightly with salt.
- 2Heat the palm oil until it clears, then fry the onions low and slow until very dark.
- 3Add the blended peppers, crayfish and stock cube and fry, stirring, until very dark and oily.
- 4Spoon the beans into bowls and pour the sauce over.
Serve it like thisScoop beans into a bowl and spoon the dark sauce on top. Serve with soft bread or fried plantain.
