Ingredients

6 servings
Rice1½ cups
Pita bread2 Egyptian breads, toasted
Mutton (goat meat)800 g lamb or beef, on the bone
Garlic8 cloves
Vinegar3 tbsp
Tomato puree¾ cup
Ghee3 tbsp
Onion1
Whole spicescardamom, bay
Saltto taste
Water6 cups

Method

4 steps
  1. 1Simmer the meat with onion, whole spices and water until tender. Keep the broth.
  2. 2Fry the garlic in ghee until golden, add the vinegar, then the tomato puree, and simmer into a sauce.
  3. 3Cook the rice in some of the broth until tender.
  4. 4Layer toasted bread in a deep dish, moisten with broth, then rice, sauce and the meat on top.
Serve it like this

Layer in a deep tray, top with meat and extra sauce. Serve hot with salad.
