Ingredients

3 servings
Fish500 g thick white fish steaks or 1 whole fish, cleaned
Green chilli8 fresh red chillies, chopped (or hot green chillies)
Salt1½ tsp
Vinegar2 tsp
Garlic5 cloves, minced
Ginger1 tbsp, minced, plus a few slices
Sugar½ tsp
Soy sauce2 tsp
Spring onion (green onion, scallion)2 stalks, sliced
Cooking oil (vegetable oil)2 tbsp

Method

4 steps
  1. 1Mix the chopped chillies with most of the salt, the vinegar, sugar, garlic and minced ginger. Rest 30 minutes or overnight.
  2. 2Pat the fish dry, rub with remaining salt and lay on ginger slices in a heatproof dish. Spread the chilli over.
  3. 3Steam over boiling water until the flesh turns opaque and flakes at the thickest point.
  4. 4Tip off most of the liquid, add soy and spring onion. Heat the oil until shimmering and pour over.
Serve it like this

Serve in its steaming dish with the red chilli on top and the juices pooled around. Rice to soak up the chilli juice is essential.
