1Simmer the chicken with onion, garlic, ginger and spring onion greens in 2 litres of water for 40 minutes, until the meat falls off the bone and no pink remains.
2Meanwhile knead the maida with 140 ml water and a pinch of salt for 8 minutes into a firm dough. Cover and rest 30 minutes.
3Lift out the chicken, shred it, and season with soy sauce and pepper. Strain the broth.
4Roll the dough very thin, dust well with flour, fold and cut into 5 mm noodles.
5Boil the potato in the broth 5 minutes, then add the noodles and zucchini and cook 5 minutes, stirring.
6Return the chicken, add the rest of the salt and the spring onion whites, and serve.
Serve it like this
Serve in deep bowls with shredded chicken and spring onion on top. Fresh kimchi or geotjeori on the side is essential.
