Ingredients

Chicken, curry cut (bone in chicken, small pieces)750 g, curry cut
Potato3 medium, halved
Egg4, hard boiled
Mustard oil4 tbsp
Bay leaf (indian bay leaf)2
Whole spices4 cardamom, 4 cloves, 1 inch cinnamon
Onion2 large, sliced
Ginger garlic paste2 tbsp
Tomato2 medium, chopped
Turmeric (ground turmeric)1 tsp
Kashmiri chilli powder2 tsp
Cumin powder (ground cumin)1 tsp
Curd (plain yogurt, natural yoghurt)½ cup
Garam masala½ tsp
Saltto taste
Water1 cup

Method

6 steps
  1. 1Rub potatoes and peeled boiled eggs with turmeric and salt. Fry in hot mustard oil until golden. Lift out.
  2. 2In the same oil, add bay leaves and whole spices, then the onions. Fry until deep brown.
  3. 3Add ginger garlic paste, tomato and the powdered spices. Cook until oil separates.
  4. 4Add the chicken and fry on high, then lower the heat and stir in the whisked curd.
  5. 5Add potatoes, water and salt. Cover and simmer until the potatoes are soft and the chicken is cooked with no pink.
  6. 6Add the eggs and garam masala, simmer 5 minutes and serve with rice or bread.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
