Idli dosa batter8 leftover idlis
Curd (plain yogurt, natural yoghurt)2 cups
Milk¼ cup
Water¼ cup
Salt½ tsp
Sugar½ tsp
Ginger1.5 cm, grated
Green chilli1, chopped
Cooking oil (vegetable oil)2 tsp
Mustard seeds½ tsp
Urad dal (split black gram)½ tsp
Curry leavesa few
Asafoetidaa pinch
Carrot2 tbsp, grated
Coriander leaves (cilantro)1 tbsp
Red chilli powder (indian red chili powder)a pinch

Method

4 steps
  1. 1Whisk curd, milk, water, salt, sugar and ginger till smooth.
  2. 2Temper mustard, urad dal, chilli, curry leaves and asafoetida in oil and add to the curd.
  3. 3Halve the idlis, arrange in a dish and pour the curd over. Soak 10 minutes.
  4. 4Top with carrot, coriander and chilli powder.
Serve it like this

Serve hot from the steamer with chutney and sambar in small bowls on the side.
