Potato3 medium, boiled and mashed
Dabeli masala1½ tbsp
Tamarinda lemon sized ball
Dates5 to 6, seedless
Jaggery2 tbsp
Garlic5 cloves
Kashmiri chilli powder2 tsp
Peanuts⅓ cup, roasted or masala peanuts
Pomegranate seeds⅓ cup
Sev½ cup nylon sev
Onion1 small, finely chopped
Fresh grated coconut2 tbsp
Coriander leaves (cilantro)a handful, chopped
Butter3 tbsp
Cooking oil (vegetable oil)1 tbsp

Method
5 steps
1Simmer the tamarind, dates and jaggery in 3/4 cup water, then blend and strain into a chutney.
2Grind the garlic, Kashmiri chilli and a pinch of salt with a spoon of water into a red garlic chutney.
3Heat the oil, add the dabeli masala and 2 tbsp of the sweet chutney, then the potato and a splash of water. Cook and mash for 4 to 5 minutes. Spread on a plate and top with coconut, half the pomegranate, peanuts and coriander.
4Slit each pav, spread sweet chutney on one side and garlic chutney on the other, then fill with the potato, onion, peanuts and pomegranate.
5Toast on a tawa with butter on both sides, then roll the edges in sev.
Serve it like this
Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
