Ingredients

Maida (all-purpose flour, plain flour)2½ cups
Butter⅔ cup, cold
Sugar½ cup
Egg2
Lemonzest of 1
Baking powder½ tsp
Salta pinch
Fruit jam (jam or preserves)1 cup apricot, cherry or mixed fruit jam

Method

4 steps
  1. 1Rub butter into flour, sugar, salt, baking powder and zest; add eggs and bring together quickly. Chill 30 minutes.
  2. 2Roll two thirds and line a 24 cm tart tin. Spread the jam.
  3. 3Roll the rest into strips and make a lattice on top.
  4. 4Bake at 180C for 35 minutes until golden. Cool before slicing.
Serve it like this

Cut wedges at room temperature and serve with tea or coffee, or a spoon of whipped cream.
