Cozze alla tarantina.

Ingredients

4 servings
Mussels1 kg in shells, cleaned
Olive oil3 tbsp
Garlic4 cloves, sliced
Dried red chilli1 or 2, crumbled
Tomato400 g ripe tomatoes, chopped (or canned)
Flat leaf parsleya handful, chopped
Baguette (french bread roll)8 slices, toasted
Black pepperto taste
Salta pinch, mussels are salty

Method

5 steps
  1. 1Scrub mussels, pull off the beards and throw away any open ones that do not close when tapped.
  2. 2Warm oil, garlic and chilli in a wide pot, then add tomatoes and simmer.
  3. 3Tip in the mussels, cover tightly and cook on high, shaking the pot.
  4. 4Discard any that stay closed, add parsley and pepper and toss.
  5. 5Rub the toasted bread with a cut garlic clove and serve alongside.
Serve it like this

Tip into a large shallow bowl for sharing with the sauce pooled underneath, an empty bowl for shells and toasted bread on the side.
