Ingredients

6 servings
Lobia, dry (dried black eyed peas)1 cup dry lobia, soaked and boiled
Sweet corn kernels (corn kernels)1 cup
Red bell pepper (red capsicum, red pepper)1, diced
Capsicum (green capsicum, green bell pepper)1 green, diced
Onion1 red, diced
Tomato2, seeded and diced
Jalapeño1, minced
Coriander leaves (cilantro)a handful, chopped
Olive oil3 tbsp
Vinegar3 tbsp, red wine vinegar
Lemon juice1 tbsp lime juice
Sugar2 tsp
Cumin powder (ground cumin)½ tsp
Salt1 tsp

Method

3 steps
  1. 1Soak the lobia overnight, then boil until tender but whole. Drain and cool.
  2. 2Whisk oil, vinegar, lime, sugar, cumin and salt.
  3. 3Toss everything together and chill at least 1 hour.
Serve it like this

Serve chilled in a bowl with tortilla chips for scooping, or spoon over greens as a salad.
