Ingredients

4 servings
Chicken, boneless600 g, poached and shredded
Mayonnaise½ cup
Hung curd (greek yogurt)½ cup
Onion1 small, finely chopped
Cooking oil (vegetable oil)2 tsp
Turmeric (ground turmeric)½ tsp
Coriander powder (ground coriander)1 tsp
Cumin powder (ground cumin)½ tsp
Red chilli powder (indian red chili powder)½ tsp
Ripe mango3 tbsp mango chutney, or 100 g ripe mango, diced
Raisins¼ cup
Almonds¼ cup, flaked and toasted
Lemon juice2 tsp
Coriander leaves (cilantro)2 tbsp
Saltto taste

Method

4 steps
  1. 1Poach chicken in salted water 12 to 15 minutes until no pink remains. Cool and shred.
  2. 2Fry onion in oil, add spices and cook 1 minute. Cool.
  3. 3Mix mayo, curd, spice paste, mango, lemon and salt.
  4. 4Fold in chicken, raisins and most of the almonds. Top with coriander and remaining almonds.
Serve it like this

Serve on a bed of lettuce with rice salad, or pile into soft bread for sandwiches. Chilled.
