Bacon (streaky rashers, streaky bacon)4 rashers, diced
Butter1½ tbsp
Onion1, diced
Celery2 sticks, diced
Maida (all-purpose flour, plain flour)2 tbsp
Chicken stock (chicken broth)2 cups
Milk2 cups
Potato2, diced
Sweet corn kernels (corn kernels)3½ cups kernels, fresh or frozen
Dried thyme½ tsp
Fresh cream (thickened cream, heavy cream)⅓ cup
Salt1¼ tsp
Black pepper½ tsp
Spring onion (green onion, scallion)2, slicedMethod
- 1Cook bacon in a heavy pot until crisp. Lift out half for garnish.
- 2Add butter, onion and celery and cook 5 minutes. Stir in flour for 1 minute.
- 3Whisk in stock and milk, add potatoes and thyme. Simmer 12 minutes.
- 4Add corn and simmer 8 minutes. Blend one cupful and stir it back in. Add cream and season.
Serve it like thisLadle into warm bowls, top with crisp bacon, spring onion and black pepper. Serve hot with oyster crackers or a warm roll.
