Ingredients

6 servings
Filter coffee powder2 tbsp filter coffee powder
Water¼ cup, boiling
Dark chocolate (bittersweet chocolate)150 g, chopped
Fresh cream (thickened cream, heavy cream)1¼ cups, divided, cold
Sugar2 tbsp
Cardamom¼ tsp
Salta pinch
Honey2 tsp
Black peppera pinch, freshly crushed

Method

5 steps
  1. 1Pour the boiling water over the coffee powder in a filter or bowl. Steep 10 minutes and strain to get about 40 ml strong decoction.
  2. 2Melt the chocolate with 100 ml cream and the decoction in a bowl over gently simmering water. Stir in the salt. Cool 10 minutes.
  3. 3Whip the remaining 200 ml cream with the sugar and cardamom to soft peaks.
  4. 4Fold a third of the cream into the chocolate to loosen, then fold in the rest gently.
  5. 5Spoon into 6 small glasses or cups and chill 2 hours. Top with a thread of honey and a tiny pinch of pepper.
Serve it like this

Serve in small steel tumblers like filter coffee. Add a thread of honey, a pinch of pepper and one cardamom pod on top.
