Ingredients

4 servings
Conch meat300 g cleaned conch (or prawns), finely chopped
Maida (all-purpose flour, plain flour)1½ cups
Baking powder1½ tsp
Egg1
Milk½ cup
Onion1 small, finely chopped
Capsicum (green capsicum, green bell pepper)½, finely chopped
Celery1 stick, finely chopped
Dried thyme½ tsp
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)½, minced
Saltto taste
Cooking oil (vegetable oil)for deep frying, about 5 tbsp absorbed
Mayonnaise4 tbsp
Tomato ketchup (ketchup)3 tbsp
Lemon juice1 tbsp
Red chilli saucea dash of hot sauce

Method

4 steps
  1. 1Pound the conch with a mallet to tenderise, then chop very finely.
  2. 2Mix flour, baking powder, salt and thyme, then add egg and milk to a thick batter. Fold in conch, onion, capsicum, celery and chilli. Rest 10 minutes.
  3. 3Drop spoonfuls into oil at 175°C and fry 3 to 4 minutes, turning, until deep golden.
  4. 4Drain and serve with a dip of mayonnaise, ketchup, lime and hot sauce.
Serve it like this
