Raisins2 cups mixed raisins and sultanas
Candied peel (tutti frutti or candied orange peel)⅓ cup
Brandy4 tbsp, plus extra to feed
Stout⅔ cup
Beef suet1 cup shredded, or cold butter grated
Breadcrumbs1 cup fresh
Maida (all-purpose flour, plain flour)⅓ cup
Brown sugar¾ cup
Egg2
Apple1, grated
Orangezest of 1
Almondschopped
Cinnamon powder1 tsp
Nutmeg¼ tsp
Allspice¼ tspMethod
- 1Soak fruit and peel in brandy and stout overnight.
- 2Mix everything else, then stir in the fruit. Each family member stirs and wishes.
- 3Pack into a greased pudding basin, cover with pleated paper and foil and tie.
- 4Steam 6 hours, topping up water.
- 5Store; steam 1 hour on the day. Turn out and serve.
Serve it like thisTurn out onto a plate with a holly sprig on top, warm brandy poured over and lit, served with custard or brandy butter.
