Ingredients

Lobia, dry (dried black eyed peas)1 cup, soaked 6 hours
Onion1 medium, chopped
Tomato2 medium, pureed
Garlic5 cloves, crushed
Ginger2.5 cm, grated
Green chilli1, chopped
Cooking oil (vegetable oil)2 tbsp
Cumin seeds1 tsp
Asafoetidaa pinch
Turmeric (ground turmeric)½ tsp
Red chilli powder (indian red chili powder)1¼ tsp
Coriander powder (ground coriander)1½ tsp
Garam masala½ tsp
Jaggery1½ tsp
Lemon juice2 tsp
Coriander leaves (cilantro)a handful
Saltto taste
Water2 cups

Method

4 steps
  1. 1Heat oil in a cooker, crackle cumin, add asafoetida, garlic, ginger and chilli, then onion. Cook until golden.
  2. 2Add tomato puree and spice powders and cook until oil separates.
  3. 3Add the drained chora, salt and water. Pressure cook 4 whistles and let pressure release naturally.
  4. 4Mash a few beans, add jaggery and simmer 5 minutes. Finish with garam masala, lemon and coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
