Classic chiroti.

Ingredients

8 servings
Maida (all-purpose flour, plain flour)1⅔ cups
Rava (semolina)3 tbsp, very fine
Ghee2 tbsp in dough, 2 tbsp for satha
Waterabout 1/3 cup
Rice flour3 tbsp, for satha
Cooking oil (vegetable oil)for frying, about this much is absorbed
Sugar⅓ cup, powdered
Cardamom½ tsp

Method

5 steps
  1. 1Knead maida, rava and 2 tbsp ghee with water into a stiff dough. Rest 30 minutes.
  2. 2Cream 2 tbsp ghee with rice flour into a fluffy satha paste.
  3. 3Roll three thin sheets, spread satha between them, roll up tightly and cut into 2 cm pieces.
  4. 4Roll each piece gently, spiral side up, and fry on low heat, spooning oil over, until the layers open.
  5. 5Drain and dust generously with sugar and cardamom.
Serve it like this

Place two chiroti in a shallow bowl, dust with sugar, and pour cold badam milk over at the table.
