Ingredients

3 servings
Paneer250 g, cubed
Cornflour (cornstarch)3 tbsp, split
Maida (all-purpose flour, plain flour)1½ tbsp
Black pepper¼ tsp
Salt¾ tsp
Cooking oil (vegetable oil)3 tbsp, split
Garlic6 cloves, chopped
Ginger2.5 cm, chopped
Green chilli2, slit
Onion1, cut into petals
Capsicum (green capsicum, green bell pepper)1, cubed
Soy sauce1½ tbsp
Red chilli sauce1½ tbsp
Tomato ketchup (ketchup)1 tbsp
Vinegar2 tsp
Water¼ cup, for the slurry
Spring onion (green onion, scallion)2 stalks, chopped

Method

5 steps
  1. 1Toss the paneer with 2 tbsp cornflour, the maida, pepper, a pinch of salt and a splash of water to coat thinly.
  2. 2Shallow fry in 2 tbsp oil on medium heat until golden on two or three sides. Drain on paper.
  3. 3In the same pan, heat the remaining oil on high. Add garlic, ginger and chilli, then onion petals and capsicum for 1 to 2 minutes.
  4. 4Add soy sauce, chilli sauce, ketchup and vinegar. Stir the last tbsp cornflour into the water and pour it in. Bubble until glossy.
  5. 5Toss in the paneer and spring onions for 30 seconds and serve straight away.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
