Ingredients

3 servings
Parotta4 godhamba roti or parottas, shredded
Chicken, boneless300 g boneless, cooked in curry
Egg2
Leek1 small leek, sliced
Carrot1, julienned
Cabbage1 cup, shredded
Onion1, sliced
Green chilli2, chopped
Curry leaves1 sprig
Garlic2 cloves
Sri Lankan roasted curry powder2 tsp
Red chilli powder (indian red chili powder)1 tsp
Water½ cup curry gravy
Cooking oil (vegetable oil)2 tbsp
Saltto taste

Method

4 steps
  1. 1Cook the chicken with the curry powder, chilli powder, salt and water into a thick curry. Shred the meat and keep the gravy.
  2. 2Fry onion, garlic, curry leaves and chilli in oil on a griddle or wide pan, then leeks, carrot and cabbage.
  3. 3Push aside, scramble the eggs, then add the roti and chicken.
  4. 4Pour in the gravy and chop and toss everything with two metal spatulas.
Serve it like this

Heap onto a plate with a small bowl of extra curry gravy on the side for pouring.
