Classic Sri Lankan chocolate biscuit pudding.

Ingredients

8 servings
Marie biscuits1½ packs
Milk1¼ cups, divided
Butter7 tbsp
Sugar⅔ cup
Cocoa powder (unsweetened cocoa powder)⅓ cup
Egg yolk2
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Cashews¼ cup, chopped

Method

5 steps
  1. 1Melt the butter with the sugar, cocoa and 150 ml milk, stirring until smooth.
  2. 2Whisk a little hot sauce into the yolks, then return to the pan and cook on low 2 minutes, stirring. Add vanilla.
  3. 3Dip each biscuit quickly in the remaining milk and lay in a single layer in a dish.
  4. 4Spread a layer of chocolate sauce over the biscuits. Repeat layers, ending with chocolate.
  5. 5Sprinkle cashews and chill at least 4 hours.
Serve it like this
