Chicken wings1 kg, split at the joint
Ginger garlic paste1½ tbsp
Kashmiri chilli powder1½ tbsp

Turmeric (ground turmeric)¼ tsp
Curd (plain yogurt, natural yoghurt)3 tbsp
Lemon juice1½ tbsp, divided
Salt2¼ tsp, divided

Cornflour (cornstarch)⅓ cup
Rice flour3 tbsp
Cooking oil (vegetable oil)1 litre for deep frying (about 5 tbsp absorbed)
Garlic5 cloves, finely chopped, divided
Green chilli2, slit
Curry leaves3 sprigs
Hung curd (greek yogurt)⅔ cup
Mayonnaise2 tbsp
Dill leaves2 tbsp, chopped
Spring onion (green onion, scallion)1, finely sliced
Celery3 sticks, cut into batons
Carrot1 large, cut into batons
Method
5 steps
1Mix the ginger garlic paste, chilli, pepper, turmeric, curd, 1 tbsp lemon juice, 1 1/2 tsp salt and the egg. Coat the wings and marinate 30 minutes.
2Stir the cornflour and rice flour into the wings until each one is coated.
3Heat the oil to 170°C on medium heat. Fry the wings in batches for 8 to 10 minutes, turning, until crisp and no pink remains at the bone.
4Whisk the hung curd, mayonnaise, dill, spring onion, 1 clove garlic, remaining lemon juice and a pinch of salt.
5Heat 1 tbsp of the frying oil in a wok on medium high heat. Add the remaining garlic, green chilli and curry leaves for 30 seconds, then toss in the wings.
Serve it like this
Pile the wings high in a bowl with crisp curry leaves on top, celery and carrot batons standing in a glass and the curd ranch in a small dish alongside.
