Kala chana, dry (black chickpeas)¾ cup, soaked overnight

Cooking oil (vegetable oil)for frying, about 3 tbsp absorbed
Onion1, finely chopped
Tomato1, finely chopped
Green chilli1, chopped
Coriander leaves (cilantro)2 tbsp
Lemon juice1 tbsp
Chaat masala1 tsp
Red chilli powder (indian red chili powder)½ tsp
Black salt¼ tspMethod
- 1Pressure cook soaked chana with water and salt for 2 whistles; let pressure release naturally. Drain and dry.
- 2Flatten each chana with a rolling pin or the bottom of a glass.
- 3Fry in hot oil until crisp and dark.
- 4Toss with onion, tomato, chilli, coriander, lemon and spices just before serving.
Serve it like thisServe in paper cones with a lemon wedge. Toss just before handing over.
