Ingredients

4 servings
Minced beef (beef mince, beef or buff keema)500 g, not too lean
Minced mutton (goat mince, ground goat)200 g minced lamb or mutton
Garlic3 cloves, grated
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Saltto taste
Black pepper½ tsp
Kashmiri chilli powder1 tsp, for paprika
Onion1 large, finely chopped, to serve
Pita bread4 pita or lepinja
Red bell pepper (red capsicum, red pepper)2, for ajvar
Brinjal (eggplant, aubergine)1 small, for ajvar
Olive oil2 tbsp
Vinegar1 tsp

Method

5 steps
  1. 1Mix the meats with garlic, baking soda, salt, pepper and paprika. Knead well and rest in the fridge for a few hours.
  2. 2Quick ajvar: char peppers and brinjal, peel, then blend or chop with oil, vinegar, a little garlic and salt.
  3. 3Shape the mince into finger thick sausages, about 8 cm long.
  4. 4Grill on high heat, turning, until charred and cooked through with no pink.
  5. 5Warm the bread on the grill, open it and fill with ćevapi, raw onion and ajvar.
Serve it like this

Tuck five or ten ćevapi into warm bread on a plate, with chopped raw onion and a big spoon of ajvar alongside.
