Ingredients

Sugar½ cup sponge, 3/4 cup ricotta, 3/4 cup marzipan, 1/2 cup icing
Maida (all-purpose flour, plain flour)1 cup
Ricotta700 g, drained overnight
Dark chocolate (bittersweet chocolate)60 g, chopped
Candied peel (tutti frutti or candied orange peel)1 cup mixed candied fruit
Almonds1½ cups, ground
Pistachiosa handful, for green colour
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Waterfor icing and syrup

Method

5 steps
  1. 1Beat eggs and sugar until tripled, fold in flour and bake a sponge at 180C for 25 minutes. Cool.
  2. 2Beat drained ricotta with sugar and vanilla; fold in chocolate and some candied fruit. Chill.
  3. 3Knead ground almonds and pistachios with sugar and a little water into a green paste. Roll into strips.
  4. 4Line a sloped tin with marzipan strips and sponge, fill with ricotta, cover with sponge and chill overnight.
  5. 5Turn out, glaze with icing and decorate with candied fruit.
Serve it like this

Turn out onto a cake stand, decorate generously and cut thin wedges, chilled.
