Ingredients

Rice1¼ cups
Black beans, dry¾ cup dry, cooked
Chicken, boneless500 g thighs or breast
Worcestershire sauce1 tbsp Lizano sauce or Worcestershire
Garlic3 cloves
Cumin powder (ground cumin)a pinch
Ripe plantain (ripe nendran banana)2 very ripe plantains
Cooking oil (vegetable oil)3 tbsp
Onion1
Capsicum (green capsicum, green bell pepper)½
Coriander leaves (cilantro)a handful
Cabbage2 cups, shredded
Tomato1, diced
Carrot1, grated
Lemon1 lime
Saltto taste

Method

5 steps
  1. 1Cook the rice with a little oil, half the onion and capsicum, finely chopped, and salt.
  2. 2Warm the cooked beans with the remaining onion, coriander stems and salt until saucy.
  3. 3Marinate the chicken in Lizano, garlic, cumin and salt, then pan sear in 1 tbsp oil until cooked through with no pink.
  4. 4Slice the plantains on the diagonal and fry in the remaining oil until caramelised.
  5. 5Toss cabbage, tomato and carrot with lime and salt. Arrange everything on each plate.
Serve it like this
