Egg5, separated
Sugar¾ cup plus 1 tbsp, divided
Maida (all-purpose flour, plain flour)1 cup
Baking powder1½ tsp
Milk½ cup
Evaporated milk¾ cup plus 1 tbsp
Condensed milk (sweetened condensed milk)⅔ cup
Ripe mango2, pureed and diced
Fresh cream (thickened cream, heavy cream)1 cup, chilled
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp

Method

  1. 1Heat the oven to 175 C and grease a 9 by 13 inch dish. Whisk the yolks with 120 g sugar until pale, add 60 ml milk and vanilla, then fold in maida and baking powder.
  2. 2Whisk the whites to soft peaks and fold in. Bake 25 to 30 minutes.
  3. 3Blend the evaporated milk, condensed milk, remaining milk and half the mango.
  4. 4Poke the warm cake all over and pour the milk slowly. Chill 4 hours or overnight.
  5. 5Whip the cream with the remaining sugar, spread on top and finish with diced mango.
Serve it like this

Cut chilled squares and lift with a spatula into shallow bowls, spooning extra milk and mango around each.
