Ingredients

6 servings
Pork1 kg shoulder with some fat, in big chunks
Orange juicejuice of 2 oranges
Garlic6 cloves, smashed
Onion1, halved
Bay leaf (indian bay leaf)2
Dried oregano1 tsp
Cumin powder (ground cumin)½ tsp
Cinnamon1 small stick
Cooking oil (vegetable oil)2 tbsp
Water1 cup
Saltto taste
Corn tortilla18 small tortillas
Coriander leaves (cilantro)¼ cup, chopped
Lemon2 limes, in wedges

Method

5 steps
  1. 1Season the pork chunks well with salt and brown them in oil in a heavy pot.
  2. 2Add orange juice, garlic, onion, bay, oregano, cumin, cinnamon and water. Cover and cook on the lowest heat for 2 1/2 hours, turning now and then.
  3. 3Uncover and let the liquid boil away until the pork fries in its own rendered fat.
  4. 4Shred into chunks with two forks, leaving some crisp bits whole. Taste for salt.
  5. 5Serve in warm tortillas with coriander, onion and lime.
Serve it like this
