Ingredients

Samp2 cups dried samp or hominy, soaked overnight
Rajma, dry (dried red kidney beans)1 cup dried beans, soaked
Pork500 g pork shoulder, cubed
Chorizo1 chorizo, sliced
Cabbage½ small cabbage, in wedges
Sweet potato1 large, cubed
Pumpkina wedge, cubed
Onion2, chopped
Garlic5 cloves
Tomato2, chopped
Bay leaf (indian bay leaf)2
Olive oil3 tbsp
Water10 cups
Saltto taste

Method

4 steps
  1. 1Simmer the soaked samp and beans in water with bay leaves until tender.
  2. 2Brown the pork in olive oil, add onion, garlic, tomato and chorizo and cook until soft.
  3. 3Add the pork mix, sweet potato, pumpkin and cabbage to the pot and simmer until everything is tender.
  4. 4Season and rest 10 minutes.
Serve it like this

Ladle into deep bowls with a piece of pork and chorizo in each. Serve with crusty bread and hot sauce.
