Classic butterscotch pudding.

Ingredients

4 servings
Brown sugar⅔ cup
Butter3 tbsp
Milk2 cups
Fresh cream (thickened cream, heavy cream)½ cup
Cornflour (cornstarch)¼ cup
Egg yolk2
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Salt¼ tsp
Cashews2 tbsp, caramelised and crushed

Method

5 steps
  1. 1Melt the butter and brown sugar in a heavy pan and cook, stirring, for 3 minutes.
  2. 2Slowly whisk in the cream, then most of the milk.
  3. 3Whisk the cornflour and yolks into the remaining milk, then whisk into the pan. Cook until thick and bubbling for 1 minute.
  4. 4Off the heat, stir in vanilla and salt. Pour into cups and chill 2 hours.
  5. 5Top with crushed cashew praline before serving.
