Ingredients

8 servings
Fresh cream (thickened cream, heavy cream)1⅔ cups, chilled
Condensed milk (sweetened condensed milk)1 cup plus 2 tbsp (most of a tin)
Brown sugar⅓ cup
Butter2 tbsp
Sugar6 tbsp, for praline
Cashews⅓ cup, chopped
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Salta pinch

Method

6 steps
  1. 1Melt the sugar to amber, stir in cashews and pour onto a greased plate. Cool and crush.
  2. 2Melt the butter and brown sugar 2 minutes, then cool and whisk into the condensed milk with vanilla and salt.
  3. 3Whip the cold cream to stiff peaks in a chilled bowl.
  4. 4Fold the flavoured condensed milk into the cream in three additions.
  5. 5Spread in a loaf tin, cover with cling film on the surface.
  6. 6Freeze at least 6 hours or overnight.
Serve it like this

Scoop into cones or bowls and sprinkle extra praline on top.
