Ingredients

4 servings
Potato1 kg floury potatoes, peeled
Butter3 tbsp
Milk¾ cup + 2 tbsp, warm
Nutmega pinch
Saltto taste
Bacon (streaky rashers, streaky bacon)250 g, diced
Onion3 medium, sliced
Beetroot (beet)pickled beetroot, to serve
Flat leaf parsleychopped, to finish

Method

5 steps
  1. 1Boil the potatoes in salted water until tender, then drain and steam dry for a minute.
  2. 2Mash with butter, warm milk, nutmeg and salt.
  3. 3Fry the bacon until crisp, then fry the onions in the drippings until deep golden.
  4. 4Spoon the mash into a mound, make a well and pile the hot bacon and onions in the middle.
  5. 5Scatter parsley and serve with pickled beetroot.
Serve it like this

Serve a mound of mash on each warm plate with bacon and onions piled into the centre, pickled beetroot on the side.
