1Melt 10 g butter on medium heat, stir in the flour for 1 minute, whisk in the milk and simmer 3 minutes. Off the heat stir in a third of the cheese, half the chilli and the pepper.
2Blend most of the coriander with the mint, garlic, lemon juice, a pinch of salt and 1 tbsp water to a green chutney.
3Mix the remaining cheese with the onion, remaining chilli and coriander. Spread chutney on 2 slices, pile on the cheese mix and close with the other slices.
4Butter the outsides and toast in a pan on medium heat for 3 minutes a side.
5Spread the béchamel over the top and grill in the oven at 220°C for 5 minutes.
6Fry the eggs in the oil on medium heat for 3 minutes and set one on each toast.
Serve it like this
Set the toast on a plate cut corner to corner, egg on top, with a swoosh of green chutney and a small pot of ketchup on the side.
