Ingredients

Egg4
Sugar¾ cup + 2 tbsp, divided
Maida (all-purpose flour, plain flour)1 cup
Baking powder1 tsp
Milk⅔ cup, to moisten
Fresh cream (thickened cream, heavy cream)2 cups, whipped
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Strawberries500 g, sliced, a few whole
Fruit jam (jam or preserves)¼ cup strawberry jam

Method

5 steps
  1. 1Whisk the eggs with 150 g sugar until very pale and thick.
  2. 2Fold in the sifted flour and baking powder gently. Bake in a lined 24 cm tin at 175°C for about 35 minutes.
  3. 3Cool and split into three layers. Drizzle each with milk.
  4. 4Whip cream with the rest of the sugar and vanilla. Layer sponge, jam, cream and sliced strawberries.
  5. 5Cover top and sides with cream and decorate with strawberries. Chill 1 hour.
Serve it like this

Serve chilled on a cake stand, cut into tall wedges with a hot knife. Coffee for the adults, juice for the kids.
