Classic blanquette de veau.

Ingredients

6 servings
Veal1.2 kg veal shoulder or breast, cubed
Water6 cups
Onion1, studded with cloves
Whole spices2 cloves
Carrot3, chunked
Leek1
Celery1 stick
Bay leaf (indian bay leaf)1
Dried thyme½ tsp
Button mushroom250 g button mushrooms
Butter3½ tbsp
Maida (all-purpose flour, plain flour)⅓ cup
Crème fraîche¾ cup
Egg yolk2 yolks
Lemonjuice of 1/2
Saltto taste
White peppera pinch
Rice1½ cups, to serve

Method

6 steps
  1. 1Cover the veal with cold water, bring to a boil, then drain and rinse the meat.
  2. 2Return the veal to the pot with fresh water, the clove studded onion, carrots, leek, celery, bay and thyme. Simmer gently.
  3. 3Cook the mushrooms in a little butter with a squeeze of lemon.
  4. 4Melt the rest of the butter, stir in flour without browning, then whisk in 750 ml strained stock. Simmer.
  5. 5Off the heat, whisk the crème fraîche with the yolks and lemon, mix in a ladle of sauce, then stir it all back in.
  6. 6Add the veal, carrots and mushrooms and warm gently without boiling. Serve with rice.
Serve it like this

Spoon over white rice in warm shallow bowls, with carrots and mushrooms on top and parsley if you like.
