Classic black pork curry.

Ingredients

5 servings
Pork700 g pork shoulder or belly, cubed
Sri Lankan roasted curry powder2½ tbsp, dark roasted
Black pepper2 tsp
Kudampuli3 pieces goraka, soaked and ground
Onion1, sliced
Garlic5 cloves
Ginger2.5 cm
Curry leaves1 sprig
Pandan leaves1 piece
Lemongrass1 stalk
Whole spicescinnamon, cardamom, cloves
Vinegar1½ tbsp
Cooking oil (vegetable oil)1½ tbsp
Water1¼ cups
Saltto taste

Method

4 steps
  1. 1Dry roast the curry powder in a pan until very dark.
  2. 2Marinate pork with the curry powder, pepper, goraka, vinegar and salt for 30 minutes.
  3. 3Fry whole spices, curry leaves, pandan, lemongrass, onion, garlic and ginger in oil.
  4. 4Add pork, sear 5 minutes, add water, cover and simmer until tender and the sauce is thick and dark.
Serve it like this

Serve in a clay pot with rice, string hoppers or bread, with a cooling cucumber salad alongside.
