Maida (all-purpose flour, plain flour)2 cups
Turmeric (ground turmeric)¼ tsp

Chana dal (split chickpeas)1¼ cups
Jaggery1¼ cups, grated

Method

1Mix maida, turmeric and salt with water to a very soft, sticky dough. Pour 3 tbsp oil over it, cover and rest at least 1 hour.
2Cook the soaked chana dal in plenty of water until soft but whole. Drain well; keep the water for saaru.
3Cook the drained dal with jaggery in a heavy pan, stirring, until thick. Add cardamom, cool and grind to a smooth paste without water.
4Roll the filling into balls the size of a small lemon. Flatten a slightly smaller ball of dough on your palm, wrap the filling, seal and pinch off extra dough.
5On oiled banana leaf or butter paper, press the ball out with oiled fingers or a rolling pin into a thin round.
6Flip onto a hot tawa, peel off the paper and cook on medium heat on both sides.
7Serve warm with ghee, or with milk or holige saaru on the side.

Serve in small bowls, warm or chilled as it likes best, with a few chopped nuts on top.
