Ingredients

2 servings
Baguette (french bread roll)1 small baguette, halved
Egg4
Butter1 tbsp
Cucumber½, in strips
Coriander leaves (cilantro)a handful
Green chilli1, sliced
Soy sauce2 tsp, or Maggi seasoning
Mayonnaise1 tbsp
Cooking oil (vegetable oil)2 tsp
Black peppera pinch

Method

3 steps
  1. 1Crisp the baguette in a hot oven or pan for 3 minutes, then split and spread with butter and mayo.
  2. 2Fry the eggs in hot oil until edges are crisp and yolks soft.
  3. 3Fill each roll with two eggs, cucumber, coriander and chilli. Drizzle soy and add pepper.
Serve it like this

Wrap the roll halfway in paper and eat it hot, standing if you like. Vietnamese iced coffee alongside.
