Ingredients

4 servings
Chicken, boneless500 g breast
Gingera few slices
Spring onion (green onion, scallion)2, divided
Cucumber1 large, julienned
Chinese sesame paste2½ tbsp, or tahini
Soy sauce1½ tbsp
Chinkiang black vinegar2 tsp
Sugar2 tsp
Chinese chilli oil1½ tbsp
Sichuan peppercorn½ tsp, ground
Garlic2 cloves, grated
Sesame seeds1 tsp
Salta pinch

Method

4 steps
  1. 1Poach the chicken with ginger and spring onion at a bare simmer until no pink remains. Cool in the liquid.
  2. 2Lightly pound the chicken with a rolling pin, then tear into shreds.
  3. 3Whisk sesame paste with soy, vinegar, sugar, garlic and a little poaching liquid until smooth. Stir in chilli oil and Sichuan pepper.
  4. 4Pile cucumber on a plate, chicken on top, pour the sauce over and finish with sesame and spring onion.
Serve it like this

Serve chilled on a platter over cucumber with the sauce poured over at the table, steamed rice or noodles alongside.
