Bal mithai as Almora's sweet shops make it.

Per serving, worked out from the ingredient table. Grandma's way is the starting point the other versions are compared with.

Ingredients

8 servings
Khoa2 cups, crumbled
Sugar80 g for the fudge, 60 g sugar coated balls (chini dana)
Ghee2 tsp
Cardamom¼ tsp

Method

4 steps
  1. 1Roast the khoa with ghee in a heavy pan on low, stirring constantly, for 25 to 30 minutes.
  2. 2Add 80 g sugar and cardamom and cook until it thickens again and leaves the pan.
  3. 3Spread into a greased tray about 2 cm thick and cool until firm. Cut into bars.
  4. 4Roll each bar in the sugar coated balls, pressing gently so they stick.
Serve it like this
