Ingredients

Maida (all-purpose flour, plain flour)1⅓ cups for pastry, 1/4 cup for frangipane
Butter90 g for pastry, 125 g for frangipane
Sugar½ cup plus 2 tbsp
Waterabout 3 tbsp ice water
Jam (jam or jelly)raspberry jam
Almonds125 g ground, 20 g flaked
Egg3
Vanilla essence (vanilla flavouring, imitation vanilla extract)or a drop of almond essence

Method

4 steps
  1. 1Make shortcrust, chill and line a 23 cm tart tin. Blind bake at 190 C for 15 minutes.
  2. 2Spread jam over the base.
  3. 3Beat butter and sugar, add eggs, ground almonds, flour and essence. Spread over jam and scatter flaked almonds.
  4. 4Bake at 180 C for 30 to 35 minutes.
Serve it like this

Cut wedges and serve with tea, or warm with custard or cream.
