Ingredients

4 servings
Fishmackerel (bangda), cleaned
Water6 cups
Tamarinda large lime size piece, soaked
Dried red chilli10, soaked
Shallots6
Lemongrass2 stalks
Galangala thumb
Turmeric (ground turmeric)½ tsp
Shrimp paste1 tsp belacan for the broth, 1 tbsp hae ko to serve
Jaggery1 tbsp
Saltto taste
Rice noodlesthick round rice noodles
Pineapplejulienned
Cucumberjulienned
Onion1, thinly sliced
Mint leavesa handful
Lettuceshredded
Fresh red chillies (fresh red chiles)sliced

Method

4 steps
  1. 1Poach the mackerel in the water until cooked. Flake the flesh, discard bones, and return the bones to the pot to simmer 15 minutes.
  2. 2Grind chillies, shallots, lemongrass, galangal, turmeric and belacan. Strain the broth and add the paste and tamarind water.
  3. 3Simmer 20 minutes, add flaked fish, jaggery and salt.
  4. 4Blanch noodles, top with broth and pile on pineapple, cucumber, onion, lettuce, mint and chilli. Drizzle hae ko.
Serve it like this

Serve in deep bowls with noodles hidden under broth and a bright pile of toppings, a spoon of hae ko drizzled on top.
