Chicken, curry cut (bone in chicken, small pieces)1 kg bone in pieces
Sweet potato glass noodles (glass noodles, cellophane noodles)soaked 30 minutes
Cooking oil (vegetable oil)1 tbsp
Dried red chilli4 to 6, whole
Dark soy sauce2 tbsp
Soy sauce¼ cup
Sugar2½ tbsp
Honey1 tbsp
Garlic10 cloves, minced
Ginger1 tsp, minced
Black peppera pinch
Water3 cups
Dried shiitake mushrooms3, soaked and sliced
Potato2, chunks
Carrot1, chunks
Onion1, chunks
Green chilli2, sliced
Spring onion (green onion, scallion)3 stalks
Sesame oil2 tsp

- 1Soak the glass noodles in warm water for 30 minutes.
- 2Brown the chicken in the oil with the dried chillies for 5 minutes.
- 3Add the soy sauces, sugar, honey, garlic, ginger, pepper, water and shiitake. Simmer covered 15 minutes.
- 4Add the potato and carrot and cook 12 minutes.
- 5Add the onion, green chilli, spring onion and noodles and cook 5 minutes until the noodles are glossy and the chicken shows no pink at the bone.
- 6Finish with sesame oil and seeds.
Serve it like thisServe on a large platter with the noodles underneath and chicken piled on top, sesame scattered. Rice and pickled radish on the side.
