Ingredients

3 servings
Egg6: 3 boiled, 3 raw
Onion2, finely chopped
Tomato2, finely chopped
Green chilli2, chopped
Ginger garlic paste2 tsp
Pav bhaji masala2 tsp
Red chilli powder (indian red chili powder)½ tsp
Turmeric (ground turmeric)¼ tsp
Butter3 tbsp
Processed cheese (american cheese)1 cube, grated
Coriander leaves (cilantro)a handful
Lemon juice2 tsp
Saltto taste
Pav (soft bread rolls, soft dinner rolls)6 pav

Method

5 steps
  1. 1Boil 3 eggs for 10 minutes, cool, peel and grate them.
  2. 2Melt butter on a tawa or pan and fry onion until soft, then ginger garlic, chilli and tomato. Mash with a spatula.
  3. 3Add the masalas and salt, then the grated eggs. Stir and mash 2 minutes.
  4. 4Crack in the raw eggs and scramble everything together until just set. Stir in cheese, coriander and lemon.
  5. 5Toast the pav in butter on the tawa and serve with the ghotala.
Serve it like this

Spoon onto a steel plate with a knob of butter on top, chopped onion, coriander and lemon wedge alongside, and buttery pav stacked beside.
