Ingredients

Capsicum (green capsicum, green bell pepper)6 large bell peppers, tops off, seeded
Minced beef (beef mince, beef or buff keema)beef mince
Cooked rice1½ cups cooked rice
Onion1, chopped
Garlic3 cloves
Tomato puree1¼ cups, divided
Dried oregano1 tsp
Paprika1 tsp
Worcestershire sauce1 tsp
Saltto taste
Black pepper½ tsp
Mozzarellagrated
Olive oil1 tbsp
Flat leaf parsleychopped

Method

4 steps
  1. 1Blanch the peppers in boiling water for 3 minutes and drain upside down.
  2. 2Brown beef and onion in oil, add garlic, oregano, paprika and Worcestershire, then half the tomato puree and the rice. Season.
  3. 3Stand the peppers in a dish, fill them and pour the remaining puree around.
  4. 4Cover with foil and bake at 190°C for 30 minutes, then uncover, top with cheese and bake 10 minutes more.
Serve it like this

Serve one or two peppers per plate with the tomato sauce spooned over and a green salad or crusty bread.
