Ripe plantain (ripe nendran banana)4 ripe plantains, in cubes or slices
Cooking oil (vegetable oil)for frying (about 60 ml absorbed)
Onion1, finely chopped
Tomato1 large, finely chopped
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1, minced
Saltto taste

Method

3 steps
  1. 1Peel and cut the plantains, then sprinkle with salt.
  2. 2Fry in hot palm or vegetable oil until deep golden.
  3. 3Mix onion, tomato, chilli and salt with a spoon of the hot oil for the sauce.
Serve it like this

Serve hot in a paper cone or bowl with chilli onion sauce spooned over, and grilled fish if you like.
