Rice1¼ cups raw rice, soaked 3 hours
Jaggery1 cup, grated
Water¼ cup
Cardamom½ tsp
Sesame seeds1 tsp
Ghee2 tsp
Cooking oil (vegetable oil)for deep frying, about this much absorbedMethod
- 1Soak rice 3 hours, drain and spread on a cloth for 30 minutes. Grind to a fine, slightly damp flour and sift.
- 2Melt jaggery with water and boil to a soft ball stage.
- 3Stir flour into hot syrup with cardamom, sesame and ghee. Cover and rest at least 6 hours or overnight.
- 4Flatten small balls on greased plastic and fry on medium until brown both sides. Press between two ladles to remove oil.
Serve it like thisDrain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
