Ingredients

6 servings
Maida (all-purpose flour, plain flour)2½ cups
Water¾ cup
Baking powder2 tsp
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Salt1 tsp
Sugar1 tsp
Cooking oil (vegetable oil)for frying (about 1/3 cup absorbed)

Method

4 steps
  1. 1Mix flour, raising agents, salt and sugar with water into a soft dough. Rest 10 minutes, knead briefly, then oil, cover and chill overnight.
  2. 2Bring to room temperature, roll into a long rectangle 1 cm thick and cut into strips 2 cm wide.
  3. 3Stack two strips and press a chopstick down the middle to join them.
  4. 4Stretch gently and fry at 200 C, turning constantly, until puffed and deep golden.
Serve it like this

Serve hot, whole or snipped into pieces, with a bowl of warm soy milk or congee for dunking.
