Ingredients

2 servings
Soy milk, unsweetened (soya milk)2 cups, unsweetened
Chinkiang black vinegar1 tbsp
Soy sauce2 tsp
Dried shrimp1 tbsp, chopped
Zha cai2 tbsp, chopped
Youtiao1 stick, sliced
Spring onion (green onion, scallion)1, sliced
Chinese chilli oil2 tsp
Sesame oil½ tsp

Method

4 steps
  1. 1Divide vinegar, soy sauce, dried shrimp and zha cai between two bowls.
  2. 2Heat the soy milk until just boiling.
  3. 3Pour the hot milk into the bowls from a height without stirring.
  4. 4Top with youtiao, spring onion, chilli oil and sesame oil.
Serve it like this

Serve in deep bowls, youtiao floating on top, chilli oil drizzled. Eat with a spoon while hot.
